Shrimp Boil Packets
Tonight… I DO NOT WANT TO COOK! Luckily, I stocked up on easy meals to make throughout the week.
Shrimp Boil Packets… It’s whats for dinner! 10 easy steps in 20 minutes!
This will be our fourth time making this incredible dish! Only this time, we are using the oven and not the grill.
What you need:
1.5 lbs Large Shrimp (pealed)
Old Bay Seasoning
Butter (1 Table Spoon)
Olive Oil (drizzle)
Garlic (1 Table Spoon)
Lemon (1 Sliced)
Red Potoates (8)
Sweet Corn (2 Ears, cut into three’s)
Step 1- Pre-heat the oven to 425 degrees. Cut the aluminum foil into two long sheets approximately 16 inches long, set to the side.
Step 2- Pre-cook the potatoes for approximately 5 minutes in the microwave. This cuts down the cooking time for the potatoes in the oven. Slice the potatoes into smaller chunks and place on one side of the foil.
Step 3- Shuck and cut the corn into three’s, place on the foil.
Step 4- Peel and remove the tails from the shrimp, place on the foil.
Step 5- Sprinkle minced garlic on the ingredients.
Step 6- Season to desired taste with Old Bay Seasoning. Approximately 1 Tablespoon.
Step 7- Add Pepper and olive oil, mix around with your hands.
Step 8- Add butter to the tops of the corn pieces.
Step 9- Slice lemons into thin pieces, add to the tops of the corn where you just placed the butter.
Step 10- Fold the foil into tight packets on the corners. Make sure to leave enough room in the middle for them to steam. Place the foil packets on a baking sheet and pop them into the oven and VIOLA!
In 15 minutes you are in for a delicious quick and easy meal. I love that we added this dish to our rotation of meals!! It’s an easy way to add fish to your diet and a really quick meal to prepare on a weeknight.
